Pineapple, coconut & mint smoothie {vegan, dairy-free} | Fig & Cherry

Is it just me or has everyone gone smoothie mad?

Don?t get me wrong, I?m not having a go at them/you, I love a good smoothie as much as the next chick. It just seems like the blogosphere has erupted with smoothie recipes left, right and centre.

I?m not imagining it. Am I?

Anyway, bring it on people. Or should I say, whizz it up people. And yes, do include all the latest trendy super foods like kale and chia seeds, so they can become more mainstream and we can all glow and glow and glow with health?

Hang on, I?m off track. Let?s chat about this smoothie.

Pineapple and coconut is one of the best ever flavour combinations, according to little old me, and here it is enhanced with mint and fresh orange juice to create a sweet and refreshing smoothie.

It could even be a cocktail if you added a splash of white rum, but that?s probably not the best idea for breakfast. Unless you want to. That?s your?prerogative.

I?m not drinking alcohol at any time since I?m pregnant, so I like indulging in this ?cocktail? for breakfast and pretending like I?m actually on holidays in Thailand, and it?s a real cocktail, and I?m lying on a deck chair on the beach getting a foot rub. Hey, a girl can dream you know!

If you?ve jumped on the green smoothie bandwagon then feel free to add a handful of spinach or kale too, the colour will change, but it will still be delicious.

Pineapple, coconut and mint smoothie

serves 2 (easily doubled or tripled)

  • 250ml (1 cup) Vitasoy Soy Milky Lite (or your milk of choice)
  • 150g (1 cup) diced pineapple, fresh or tinned
  • 2 tablespoons coconut cream
  • 4 fresh mint leaves
  • 1 orange, juiced
  • 10 ice cubes

1. Place all the ingredients into a blender and process until smooth. Serve immediately.
